What's for dinner?
Ah yes... the question on everyone's minds.
My boyfriend (we'll call him the Architect here as well) and I both work full time and I also am working on my Master's at the same time. "What's for dinner?" is about the last thing on our minds in the morning when we're both running to get out the door. This means that our dinners during the week are a little... haphazard, shall we say.
Usually I take out either some chicken or fish (we very rarely eat red meat at home) to thaw and then make something up when I get home.
I really need to sit down and plan out weekly menus. I have a few meals that I always fall back on but I'd love a little more variety (and I'm sure the Architect would like that as well).
This morning, I took out some chicken. I really wanted to use up some spinach that I have but I cannot think of anything to make with the spinach and chicken (spinach and chicken enchiladas, quesadillas, or lasagna) that would not require running to the grocery store after work. The grocery store is usually the last place I feel like going after getting off the subway. Anyhow, usually we are pretty well equipped with cooking staples and I can usually find something to make. In lieu of making a store run, I'm thinking of doing a chicken terriyaki stir fry with pineapple and onion. It's seriously easy but will work in a pinch. I'll serve it over rice (I love my rice cooker).
What do you cook when you don't have a plan?

With chicken, I will usually bread it and bake it. Sometimes, I will bake the chicken with rice and some cream of mushroom soup. Both easy and fairly quick.
If I dont have any meat out, pancakes and eggs are my fall back!
With spinach and chicken - pound out the chicken so that it is thin. Put spinach and some mozzarella or ricotta cheese on top. Season with salt/pepper/whatever to taste. Roll it up. Secure with a toothpick. Bake until cooked. (That actually sounds really good, we are meeting my Dad for dinner tonight, but I might have to do that tomorrow!)
For a while I was really good about meal planning, now not so much. I really should start doing that again!
Stir fry! This weekend, I cleaned, cut, blanch and froze about 12 cups of veggies in 3 cup portions for easy stir fry! Or I usually have pasta + jarred sauce on had for spaghetti.
I like to use allrecipes.com and put in what I have on hand. I usually can find a recipe (or come up with something based on a recipe) that suits what I have on hand.
When I don't have a plan, I'd just fry some noodles.
Anyway, congrats on the food blog. I thought of doing one too but I am not good at cooking or baking. I am just good at eating!
when there's no plan to activate in the allen house, we fall back on french toast, pancakes, or a wonderfully homey dish that hubby makes that we call pork and rice! it's lovely.
if its chicken.. my go~to is poached chicken with tarragon sauce and a veg. It's super easy cause you poach in the liquid that becomes your sauce. YUM!
